Description
This Chardonnay from Domaine de Montille comes from the renowned Premier Cru "En Remilly", located in a prime position behind Montrachet. The vineyard, south-facing and characterized by shallow, stony soil, imparts the wine with a combination of generosity and mineral tension. The production follows the principles of organic viticulture.
The vinification involves a light settling, followed by alcoholic and malolactic fermentation in barrels made from long and lightly toasted Allier oak. After approximately one year of aging in wood, the wine is transferred to stainless steel tanks for a further 4-6 months of maturation, useful for maintaining freshness and tension.
On the nose, it expresses notes of Granny Smith green apple, ripe pear, and a hint of bergamot. On the palate, it is generous and straightforward, with a clear mineral profile, good maturity, and a persistent salty vein that enhances its drinkability. The balance between aromatic intensity and freshness makes it fascinating from a young age, while also promising beautiful evolution over time.
